Shrimp & Spring Greens with Pasta

Ingredients:

  • Swiss Chard, Kale, Green Onions, Collards and Beet Greens from my Garden or yours.
  • 1 lb large cooked shrimp
  • ½ cup of white wine or broth
  • Olive oil
  • 5 cloves chopped garlic
  • Salt, Pepper, Cayenne to taste
  • 2 cups of cooked Penne Pasta
  • ½ cup of grated Parmesan Cheese

  1. Wash and chop the greens and place in a large colander to drain.
  2. In a large skillet, saute the garlic in olive oil till golden.
  3. Add the greens a bunch at a time and slowly drizzle the wine or broth.
  4. When the greens are bright in color and almost done, add the shrimp and toss for 3-5 minutes.
  5. Add the cooked pasta and toss.
  6. Top with grated cheese and serve.
