Kale and white bean salad

Ingredients:

  • Kale from your garden or market
  • Tomatoes from your garden or market
  • 2 Persian cucumbers from your garden or market
  • Can of white beans
  • Olive oil
  • Salt and black pepper
  • Large lemon from your garden or market
  • Toasted sesame seeds

  1. Chop the kale and dice tomatoes into your salad bowl
  2. Add the sliced cucumber
  3. Rinse the white beans and add to the bowl
  4. Squeeze whole lemon
  5. Drizzle olive oil
  6. Salt and pepper to taste
  7. Sprinkle sesame seeds
  8. Toss and serve chilled

Serves four – Very Vegan !!!!

Shrimp & Spring Greens with Pasta

Ingredients:

  • Swiss Chard, Kale, Green Onions, Collards and Beet Greens from my Garden or yours.
  • 1 lb large cooked shrimp
  • ½ cup of white wine or broth
  • Olive oil
  • 5 cloves chopped garlic
  • Salt, Pepper, Cayenne to taste
  • 2 cups of cooked Penne Pasta
  • ½ cup of grated Parmesan Cheese
